THE VEGETARIAN

Unity teaching is essentially a spiritual teaching, but it has its practical aspects. We do no teach that food produces or destroys health, but we do teach that because of its greater purity a nonmeat diet imposes a minimum of effort on the spiritual forces that animate and sustain the physical organism. The source of all conditions is the thought, and thought rightly exercised reforms appetite. The Vegetarian page in Weekly Unity is designed to help those who wish to work both from the inner and the outer to bring the appetite into harmony with the love and the purity of Spirit.


UNITY INN A POPULAR CUISINE

A few years ago Unity Inn, the largest and most beautiful meatless cafeteria in the world, was established to demonstrate that the food comprised in the meatless diet is delicious, satisfying, and healthful. The establishment of Unity Inn was the outgrowth of an ideal of the Unity School of Christianity concerning matters of diet, and today that ideal is manifest in practical realization that is a source of much joy and satisfaction to the founders. The public and out-of-town visitors have accorded the Inn liberal patronage and the cuisine is daily growing more popular.

Expert chefs, all specialists in their lines, prepare the meals at Unity Inn. Special care is taken to give a home cooked savor to the food. Besides, the individual touch in the handling of the food, and the exclusive knowledge displayed in the proper combinations of ingredients, make Unity Inn menus different from and better than those to be found elsewhere. Our chefs have many calls for Unity Inn receipts.

Another of the special features that Unity Inn offers its guests is the excellent service that its high class employees render. Order, dispatch, and cleanliness mark the work of the employees. Table service is rendered on second orders, and so efficient is this service that one is not reminded of being in a cafeteria.

Bring the family to Unity Inn. We strive to make the family group feel at home. Families are finding that they can have excellent dinners with us for less money than at home. Do not hesitate to bring the children, as we take pleasure in catering to their needs. Ladies and children will always find a pleasing atmosphere at the Inn. Toy balloons or other souvenirs are given to the little ones. The children, as well as you, will find delight in partaking of the pure food that we serve.

The salad counter that has been installed opposite the steam tables will no doubt impress you, as experts stand ready to prepare any salad to suit your taste. The salads are made as you order them and all the ingredients are fresh and appetizing. The service at this counter cannot be duplicated elsewhere in Kansas City.

A soda fountain is another of the features that have rendered Unity Inn a mecca for the hungry and thirsty.

Unity Inn does something more than eliminate meat from the menu; it offers adequate meat substitutes, in both cooked foods and raw foods.The proper selection of your diet will be suggested by the

complete display of the various dishes, wherein there is no taint of animal flesh. Delicious concoctions of nut meats, vegetables fresh from Unity Farm, wholesome fruits, eggs, milk, and butter will guide you in the selection of a nourishing and satisfying repast.

Unity ideas about vegetarianism and its relation to spirituality as manifested in spiritual and physical health are being accepted by the public. Unity Inn has become known in every corner of the world, and we often have visitors from foreign lands. Among the distinguished foreigners who have dined here recently is Senator Paul Dupuy, of France.

Many Kansas City physicians are sending their patients to Unity Inn as part of their course of treatment. Prominent dieticians have recognized the value to be derived from our vegetarian diet.

All food prepared by our cooks is strictly vegetarian. No foods derived from animals, other than milk, butter, eggs, and cheese are used in the receipts. Vegetable oils are substituted for animal fats.

You can dine at Unity Inn with a clear conscience in the knowledge that no animal has given its life to satisfy your appetite.

Unity Inn is two stories high and covers a plot of ground seventy by one hundred and fifty feet.

Unity Inn is built in the Italian style of architecture, with a terrace bordered by a hedge surrounding the entire building. The doors of the main dining room open directly on to this terrace, so that the guests have the effect of eating outdoors.

This impression is heightened by the interior, which is treated in garden effect—red tile floor; numerous bay trees; a large fountain in the center of the room. The doors and the windows are draped with handsome, harmonizing cretonne.

The general color scheme of the room is in grays and greens. The furniture is of the garden type, gray with blue and orange trimming around the legs of tables and chairs, and blue stripes around the tops of the tables. The chairs are of the wheel-back Windsor design.

The second floor is arranged for a Unity community entertainment hall, being a theater in miniature. This is known as the Pergola room. It is used for banquets, parties, committee meetings, and entertainments.


In a man of average size are twenty-five billion red cells floating in the blood stream. These cells, if placed side by side, would cover an area of about 22,000 square feet.


Athletes and others who wish to attain the highest physical condition should eat salads freely and should abstain from meat.
